Broccoli, Cheddar & Wild Rice Casserole

Our lil. princess Stelly just celebrated her 2nd birthday on April 21st, 2 days earlier! And I, with help from her daddy and her “ah boh” (meant aunt in Hainanese), had prepared simple dishes for her birthday party at daycare.

“Broccoli, Cheddar & Wild Rice Casserole” is one of the main dish. I forgot to take a picture of that dish itself. Anyway, here’s the recipe. Hope friends and readers can enjoy cooking and eating.

Ingredients:
3 tablespoons butter
1/2 large onion, diced
Salt
2/3 cup uncooked wild rice blend, rinsed
1 pound broccoli
1 garlic clove, minced
1/4 teaspoon ground mustard powder
Pinch of cayenne pepper
2 tablespoons all-purpose flour
1 cup whole milk
2/3 cup low-sodium vegetable or chicken broth
8 ounces cheddar cheese, coarsely grated
Freshly ground black pepper

Methods:
1. Heat 1 tablespoon butter in a medium saucepan over medium heat.
Once melted, add onion and sauté until translucent, about 5 minutes.
2. Add rice to onion and cook for 1 minute, then add 1 1/3 cups water and a few pinches of salt.
3. Bring mixture to a simmer, then reduce heat to lowest temperature and cook with the lid on for about 50 minutes (or whatever amount of time as suggested on your package of rice).
4. Peel broccoli stems and dice them into large chunks. Cut florets into 1-inch pieces. Cook in boiling, well-salted water for 2 to 3 minutes, then drain.
5. Combine cooked wild rice blend and broccoli. Set aside.
6. Prepare cheese sauce.
7. Pour cheese sauce over and gently nudge to ensure all pieces get some sauce.
8. Sprinkle remaining cheese over top.
9. Bake casserole for 10 to 15 minutes, until the sauce is bubbly, then run mixture under the broiler until cheese is toasty on top.

Methods for Cheese Sauce:
1. Melt remaining 2 tablespoons butter in pan over medium heat. Once melted, add the mustard powder, a pinch of cayenne and garlic and let sizzle for 1 minute.
2. Add flour and whisk until combined, cooking the butter-flour mixture for 1 to 2 minutes.
3. Slowly drizzle in milk, whisking constantly, then broth.
4. Bring to a simmer and cook mixture at a simmer, stirring the whole time, until sauce is slightly thickened, about 5 minutes.
5. Remove pan from heat and stir in 1/3 of grated cheese until melted. Season generously with salt and pepper.

随意的Lovely Pasta

我超爱吃Pasta!讲到Pasta,吃我就厉害,呵呵呵。。讲到煮呢,老公就是我心目中的Pasta达人!也因如此,我很少很少会在餐厅吃Pasta,因为最好吃的Pasta是老公煮的,可以在家里享受各式各样的Pasta,是一种幸福。。。

收藏了好一些Pasta的照片,都是老公的作品。。虽然有些看上去普普通通的,但我就是觉得好吃,尤其是简单的搭配橄榄油、芝士或则Portobello蘑菇。。老公做的Pasta都很随意,没有特定的材料或则什么名堂,所以就靠我自个儿的想象力给他们去了名字。

这个看上去像Alfredo Portobello,用的Pasta是Fettuccine,也是我最爱的其中一种。

而这一个则是把剩下来的牛肉香肠做成配料,Pasta是以蒜和橄榄油拌入为主。

差不多同样的做法,蒜和橄榄油为主,搭配羊肉香肠还有灯笼椒点缀。

这些Pasta的照片都显出我跟老公俩比较爱吃干性简单的Pasta,不需要很多酱或则配料。。比如是番茄红酱,我俩都会甚少吃,不过如果选择酱料,都会偏向奶油口味的。

酸辣开胃鲜虾沙律 Hot And Sour Shrimp Salad

一向来有点拒绝美乃滋的我(怕肥嘛),按耐不住这个酸辣开胃鲜虾沙律的诱惑,结果吃了一个又接一个。。带有点酸,有点儿辣,搭配美乃滋,这个沙律超好吃的,吃了整盘都不会腻!惨啦,肥咯!既然好吃,就跟大家分享,让你也“肥肥”一下(开玩笑的啦)。。呵呵呵!对了,这么棒的食谱,得谢谢我的妈咪哦!食谱来自卡珞的妈咪。。

Hot Sour Shrimp Salad

材料:鲜虾,大葱(切丝),红辣椒(切丝),小青辣椒(切粒),炸鸡粉

调味料:桔子汁,美乃滋

做法:
1。虾子去壳后,开背去虾线,洗净。
2。热锅放少许橄榄油,把虾子均匀裹上炸鸡粉,放入锅内煎熟后捞起。
3。将大葱,红辣椒,还有小辣椒放入锅里(用煎过虾剩下的油)稍微略炒。
4。熄火,放入美乃滋,再放入煎过的虾子,淋上桔子汁。
5。拌匀后装盘即可。

对了,材料的份量没有一一表明,因为这个食谱挺随意的,喜欢吃酸,可以加入多一点的桔子汁,小孩子不吃辣,就减少小辣椒,或则不放。

心型蛋烤面包 Heart-Shaped Bread

甚少进厨房,依然可以为你心爱的另一半做份好看的爱心早餐。。刚刚过的星期天早晨,给老公准备了这份小小惊喜,老公见了感到窝心,我俩就这样一起享用10分钟“爱心早餐”。

心形蛋糕面包

做法:
1。准备两片面包。
2。在其中一片面包上割出一个心形(不一定要心形,也可以是四方形)的形状。
3。将另外一片稍微压扁,然后铺上一片之士,把割出形状的面包片紧紧贴在上面。
4。把一粒鸡蛋打进心形里,然后撒些黑胡椒粉,还有mixed herbs(也可以尝试放些培根,或则火腿片),接着放入烤箱里烤大约10分钟或止蛋白熟即可。
5。割除来的心形面包不要浪费,涂上牛油后也可以放入烤箱一起烘烤。
6。为了使早餐没有那么单调,把烤出来的心形面包也涂上了果酱(我用的是Raspberry果酱)。
