通常家家户户会在过农历新年做的其中一种年饼。。我也不例外。虽然已经过了年,还是可以的哦,当作手信送给朋友。三个星期前,做了一些些,送给来自香港的朋友(现住在美国),跟老公住的地方还算不远,就劳烦他,千里迢迢把爱心饼干带给在美国的老公。
很开心,朋友(Maggie, Eric还有他们的小东东Ivan)赞好吃,呵呵。。虽然对老公来说,我做的还是没有家婆做的一般好吃!老公说我怎么那么吝啬,栗米片这么少,而且稍微硬了点,哈哈哈。。这个老公意见还挺多的,不过老公他依然赞不错啦!其实做这个饼干真的是随人意,喜欢吃多栗米片,就多放哦!
这些照片是老公收到后帮我拍下来的。。非常感恩这个朋友不介意帮我带着饼干回美国去。。而且还很有效率的隔天就送到老公的公司去,谢谢啦!
材料:
牛油(unsalted butter)250g
细砂糖(granulated sugar)130g
鸡蛋(egg)1
自发面粉(self-raising flour)350g
栗米粉(corn starch)30g
vanilla essence 1tsp
栗米片(cornflakes crushed)250g(随意的)
葡萄干(raisin)(随意的)
做法:
1。用搅拌器把牛油、细砂糖和vanilla essence搅匀,打至颜色变浅。
2。加入鸡蛋继续搅拌。
3。接着筛如粉类(自发面粉和栗米粉),拌匀。
4。把面团放入雪柜冷藏大概半个小时。
5。从雪柜取出,(*加入葡萄干,稍微搅拌)把面团揉成一小团一小团的,放入栗米片碎里,沾上栗米片碎。
6。重复步骤5直到全部揉成小团后,放入预热150度(350 degree F)的烤箱烤大概25分钟或则呈现金黄色即可。
Method:
1. Beat butter and sugar till pale and creamy. Add vanilla essence.
2. Add in egg and continue to beat till smooth.
3. Fold in the flour mixture including corn flour. Mix well to make it into a dough. (Mixture must not stick to our hands when touched.)
4. Keep the dough in refrigerator for about half-an-hour.
5. Take out from refrigerator, (*add in raisins and mix with the dough) scoop out about 1 teaspoon of the dough and roll it into the crushed cornflakes.
6. Transfer them to a baking tray lined with parchment paper and bake for 25 minutes at 350 degree F or till golden brown.

The raisins used is it black raisins? Need to be soaked in rum for overnight?

Irene, I used black raisin, and I didn’t soak in rum. Unless you want rum raisin flavor, which I never tried. I only used rum raisin for cheesecake before.
