我在很多的部落还有论坛等看到了蒸蛋糕,是用玛丽饼的。中学时期,我曾经做过蒸蛋糕,不过那时候用的是咸饼,味道还蛮好的。隔了那么多年,应该有12年吧,这次是我第二次做蒸蛋糕,最大的启发还是来自Irene的食谱巧克力马里饼蛋糕,在此要谢谢她的分享哦!
一个简单的开场白,现在轮到了简单的蒸蛋糕做法。我班门弄斧了。。希望大家会喜欢这个蛋糕,口感好,很香,昨天一出炉,没两下子,已经吃光了。我做的是比较小型的哦!
材料:
牛油 150克(软化)
幼糖 120克
蛋 3粒
原味玛丽饼 150克(打成粉状)
发粉 5克 (1/4茶匙)
可可粉
做法:
1)将牛油和糖打至松发。
2)逐粒加入蛋搅拌均匀,再拌入玛丽饼粉,混匀成面糊。
3)把面糊分成3份,一份加入可可粉(随喜,多点巧克力味道就较浓)搅匀。
4)在烤盘周边及底部扫上一层牛油。
5)将一份原色的面糊倒入烤盆里,抹平。
6)放入已经蒸热的锅中,蒸15分钟,取出,用竹签在已蒸热的蛋糕上叉几个洞。
7)再铺上一份可可面糊,抹平,再蒸15分钟,取出。
8)最后将剩下的那一份原色面糊铺上,抹平,蒸15分钟。
9)取出来,稍微冷却后就可以切片,放入口内啦!
吃了第一口,我爱上了这个做法的蛋糕,非常容易,而且味道很棒!现在看着看着,多么希望还有剩下可以顺手就吃一个!呵呵呵。。

因为博友的要求,所以把英文版本附在这儿做参考。
Ingredients A:
150g Marie biscuit (crush)
5g double action baking powder (sift)
Ingredients B:
150 castor sugar
150g butter
Ingredients C:
3 eggs
Ingredients D:
10g cocoa powder (sift)
Methods:
1 ) Mix Ingredients B into a mixing bowl stir till sugar dissolved, strain
2 ) Add Ingredients C, one by one and mix well, then followed by Ingredients A and mix until well combined
3 ) Divide batter into 3 portions. Add cocoa powder into one of the portion and mix till well combined
4 ) Grease baking mold (6 inches) and line with baking paper
5 ) Pour 1st portion of plain batter into baking mold and spread neatly
6 ) Steam with high heat for 15 mins. Remove baking mold from steamer, prick
7 ) Pour in 2nd portion of brown batter and spread neatly. Steam with high heat for 15 mins. Remove baking mold from steamer, prick
8 ) Pour in 3rd portion of plain batter and spread neatly. Steam with high heat for 15 mins
9 ) Remove baking mold from steamer and let cool

I like to try this, lately i also fond in steam cake . so far only try steam banana cake b4. the cake look so nice, wondering how is the texture? I see from the pic it look like a bit kuih texture?

Yes esther, I used hand mixer to prepare the batter. The cake sweetness is just good, because I don’t eat very sweet too.

牛油和糖打发至松,可以形容一下吗?因为我做了失败,而且做出来面胡只是一点儿,最重要的饼干放几片,要把饼干打成粉吗

meihwa,牛油加糖,以低速打发后应该是呈现奶白色,不要打过头,不然牛油就溶化了。
你有kitchen scale吗?记得要秤饼干粉重量,150g,我忘了需要多少片饼干。其实我的食谱有注明,“原味玛丽饼 150克(打成粉状)”,饼干要打成粉状哦。
我用的牛油是块状的,不是Planta。不过Planta是可以代替牛油的做蛋糕的。
如果蒸的时候变成油,我相信你已经把牛油和糖打过头了。

可以和我说你的牛油名字吗?我直接去买,就是变白就好是吗?可是还是会有细砂糖对吧,是的,我没有经验所以不知道怎样才算打好,打好是粘粘的吗?可是为什么你可以蒸那么大个,我是做乒乓饼的也一样步骤,饼干也是搅成粉对吧,

我的朋友做了成功不过较硬一点,她做的步骤和你的相反,他是鸡蛋和糖打发,直接加牛油和饼干脆下去,拿去蒸,饼干他没有打成粉状,只是打脆罢了,请问两者做法有不同吗,
